Only Bresaola produced in the province of Sondrio can be called Bresaola della Valtellina. In these valleys, the fresh, dry, and fragrant air that descends from the Alps meets with the milder air on the valley floor, thereby generating the ideal conditions for ageing the product.
It is here that Citterio produces its own Bresaola della Valtellina, good and organic right from the start. Indeed, the entire production process is rigorously organic, controlled, and certified. The cows are raised in the open air and nourished with organic feeds.
The low-fat goodness is also organic.
