Remove the seeds and gel from the tomato, then brunoise them along with the green parts of the courgettes, the red onion and the pepper.
Dress with salt, pepper, EVOO, the lemon juice and grated peel.
Let marinate for 30 minutes. Set a few spoonfuls aside for decoration.
Mix the diced vegetables into the caprino cheese and break up a few basil leaves and add to the mixture.
With a piping bag, pipe the filling onto the chicken slices, then roll up like cannelloni.
Serve the “cannelloni” with a bit of the chopped vegetables spooned on top and decorate with a few basil leaves.
