Stuff the artichoke heart with a filling obtained mixing minced meat with an egg, salami cubes and pecorino cheese, then stir-fry them in a pan. Place them on a sheet pan and bake them for 20 minutes at 160°C.
Coat lamb chops in flour, beaten eggs and in the aromatic breadcrumbs. Gently fry them in clarified butter and finish cooking them in the oven.
Place the fried lamb chops and the artichokes on the serving plate and add salt and pepper.
