Separately, beat the eggs well, incorporating a lot of air and adding a pinch of salt.
Roll out the puff pastry into a quiche dish or onto a baking sheet, arrange the Wuoi? Werdure on top, pour over the eggs, cover with slices of mozzarella.
Bake for 15/20 minutes. Just before you finish cooking, remove the quiche and cover the surface with a thin layer of pesto. Bake again for 2/3 minutes, remove from oven and serve.
