Cut the courgettes and the yellow pepper into chunks and the red onions into thick rounds; grill with extra virgin olive oil and a pinch of salt. Cut the red pepper into cubes and blend it with extra virgin olive oil and chilli pepper, to obtain a full sauce.
Sauté the vegetarian wuoi in a pan with a trickle of extra virgin olive oil and a pinch of salt, until a golden crust has formed. Cut the frankfurters into chunks and skewer the ingredients alternating frankfurters and grilled vegetables.
Serve the vegetarian skewers accompanied by the hot red pepper sauce.
