Cut the bread into halves and toast it in a non-stick pan.
Sauté the vegetarian wuoi in a pan with a trickle of extra virgin olive oil and a pinch of salt. In the meantime, cut the fresh red onion into thick rounds and the cherry tomatoes into halves. Season the onion and the cherry tomatoes with the mayonnaise.
Once the bread has cooled down, stuff the sandwich with the vegetarian wuoi and the fresh vegetables seasoned with the mayonnaise.
Serve decorating with fresh mint leaves .
