Laboratory & Certifications

To guarantee quality, safety, and the finest flavours of Italian charcuterie, Citterio has had its own internal laboratory for chemical and microbiological analysis since the 1950s. A true pioneer in the industry, this innovation allows constant monitoring of raw materials and environments, ensuring the launch of new products that meet evolving consumer needs.

Our Chemical Analysis Laboratory uses the most advanced techniques, combined with traditional methods, to carry out a high number of tests in a short amount of time. In addition to evaluating the quality of ingredients, raw materials, packaging, and every element that comes into contact with the product during the production process, the lab also conducts studies to develop new products with ever-improving nutritional characteristics.

The Microbiological Analysis Laboratory focuses on evaluating the typical microbiological flora of cured meat products. Fermented foods are monitored throughout their production stages to ensure maximum quality and consistency. Microbiological checks also involve monitoring the production environment and inspecting incoming raw materials. All controls are carried out using international methods and state-of-the-art equipment capable of quickly and accurately identifying microorganisms — even through DNA identification. This thorough work ensures the highest quality of our products throughout their entire shelf life.
