First of all slice onions and put them in a saucepan over a gentle heat. Stir-fry for 5 minutes and add salt. Then, add sugar and keep cooking for about 20 minutes while stirring from time to time until onions are evenly cooked. Let it rest and start preparing the other ingredients. Cut the fennel into thin slices, then peel the orange, remove the white part and cut it in round slices.
Now it’s time to create the poke bowl with the slices of lentil charcuterie, the fennel and the orange slices. Finally, put the caramelised onion in the centre.
Sprinkle with pepper, a little salt, a trickle of oil and the dish is ready.
