Fritters with asparagus and sweet bacon strips

Delicious and crispy, these fritters combine the sweetness of spring asparagus with the irresistible savouriness of Citterio Sweet Bacon Strips. Perfect as a tasty starter or finger food for an aperitif, they win you over at the first bite with their rich and balanced flavour. Easy to prepare, ideal to share.

Ingredients:

For about 12 fritters:

1 bunch of asparagus
100 g Citterio Sweet Bacon Strips
2 eggs
80 g all-purpose flour
50 ml milk
30 g grated Parmesan
Salt and pepper to taste
Oil for frying

Preparation

Wash the asparagus, remove the toughest part of the stalk and slice them into thin rounds. Blanch them for 3–4 minutes in salted water, then drain and set aside.
In a non-stick pan, brown the Citterio Sweet Bacon Strips without adding any fat until crispy. Let them cool slightly.

In a bowl, beat the eggs with the milk, add the sifted flour and mix until you get a smooth batter. Add the Parmesan, asparagus and browned bacon. Season with salt and pepper.
Heat the oil in a pan and drop in spoonfuls of the mixture to form fritters. Cook over medium heat for 2–3 minutes per side, until golden and crispy.

Drain them on paper towels and serve hot, perhaps with a light yogurt sauce or a flavoured mayonnaise.
