Potato Croquettes with Milano Salami

Golden croquettes with creamy mashed potatoes and Milano salami, crunchy outside and soft inside. Ideal as a starter or party finger food.
Ingredients:
500 g potatoes
200 g Milano salami
40 g grated Grana cheese
3 eggs
60 g breadcrumbs
Nutmeg to taste
Black pepper to taste
Salt to taste
1 l peanut oil
Preparation
Boil the potatoes with their skin on, then peel and mash them until smooth. Add one egg, grated Grana, julienned Milano salami, salt, pepper and nutmeg. Mix well until the mixture is soft but compact.
Shape into croquettes with your hands, dip them twice in beaten eggs and breadcrumbs. Fry in hot oil until golden brown. Drain on paper towels and serve warm.
