This baby spinach salad with sliced cooked ham strips is a simple yet flavorful dish, perfect for those looking for lightness without sacrificing taste. The combination of ingredients creates a perfect harmony: the freshness of the spinach, the softness of the ham, the crunch of toasted pine nuts, and the bold flavor of Taggiasca olives and sun-dried tomatoes. Easy and quick to prepare, it’s perfect to enjoy on its own or paired with toasted bread for an even more delightful texture.
160 g of baby spinach
200 g of cooked ham
30 g of pine nuts
30 g of sun-dried tomatoes
40 g of Taggiasca olives
Start by toasting the pine nuts in a non-stick pan over medium heat, stirring them frequently to prevent burning, or roast them in the oven for a few minutes until golden. Meanwhile, slice the cooked ham into strips and set it aside.
In a large salad bowl, add the well-washed and dried baby spinach. Then, add the sliced cooked ham strips, toasted pine nuts, Taggiasca olives, and chopped sun-dried tomatoes. Gently toss to evenly distribute the ingredients.
Dress the salad to taste with extra virgin olive oil, a pinch of salt, and, if desired, a touch of pepper. For an even more delightful dish, top with crunchy croutons. Serve immediately and enjoy this flavorful and savory salad!
