Ditalini with peas, ham cubes and pecorino

A simple and creamy pasta dish, perfect for bringing to the table the authentic flavor of cooked ham cubes combined with the sweetness of peas and the savory touch of pecorino cheese.
320 g ditalini pasta
150 g cooked ham cubes
250 g peas
1 shallot
Extra virgin olive oil, to taste
Salt, to taste
Black pepper, to taste
Grated pecorino cheese, to taste
Finely chop the shallot and sauté it in a large pan with a drizzle of extra virgin olive oil until soft and golden.
Add the cooked ham cubes and cook over medium heat for a few minutes to enhance the flavor.
Add the peas, stir well and cook for about 10 minutes, adding a ladle of hot water if needed to keep the mixture soft and creamy. Season with salt and black pepper.
Meanwhile, cook the ditalini in plenty of salted boiling water until al dente, reserving a little cooking water.
Drain the pasta and transfer it to the pan with the sauce, mixing everything together. Add a little cooking water to achieve a creamy consistency.
Finish with a generous sprinkle of grated pecorino cheese and serve immediately while hot.
