Smooth fava bean soup enriched with pecorino cheese and garnished with crispy salami strips. A rustic yet elegant starter for any occasion.
Ingredients:
8 slices of Milano salami
80 g grated pecorino
1.2 l vegetable broth
2 garlic cloves
Extra virgin olive oil
Salt
Pepper
Preparation
Sauté crushed garlic in olive oil, add fava beans and stir for 2-3 minutes. Pour in hot broth, cover and cook for 20 minutes.
Blend the beans until smooth, strain through a fine sieve and return to the pot to thicken slightly. Stir in pecorino, season with salt and pepper, and serve warm with salami strips and a drizzle of olive oil.
