Pumpkin velouté with crispy croutons and Citterio’s Original Milano Salami

A simple yet refined autumn dish, enriched with the unmistakable flavor of Salame Milano l’Originale from the Tagliofresco line by Citterio, served raw on top for an irresistible contrast.

Ingredients:

800 g pumpkin, peeled and diced
1 medium potato
1 onion
700 ml vegetable broth
3 tbsp extra virgin olive oil
Salt and pepper to taste
4 slices rustic bread
8 slices Salame Milano l’Originale – Tagliofresco Citterio

Preparation

Prepare the vegetables. Cut pumpkin, potato, and onion into pieces.
Sauté. In a saucepan, heat 2 tbsp of oil and add the onion. Let it soften, then add the pumpkin and potato.
Cook. Pour in the hot broth, cover, and cook for about 25 minutes, until tender.

Blend. Season with salt and pepper, then blend until smooth and creamy.
Make the croutons. Cut the bread into cubes, drizzle with oil, and toast until golden and crispy.
Plate. Pour the velouté into bowls, add croutons, and top with Salame Milano l’Originale Citterio, served raw to enhance its aroma and delicacy.

Add a drizzle of rosemary-infused oil or a few drops of balsamic vinegar for an extra autumnal touch.
