Fluffy savory pancakes with grated zucchini, parmesan, and Milano salami: perfect for brunch, appetizers, or quick dinners. Easy and delicious!
Ingredients:
375g courgettes
2 eggs
50g parmesan in thin flakes + to taste for serving
180g 00 flour
125g fresh milk
24 slices of Salame di Milano
1 teaspoon of yeast for savory pies
salt
Preparation
Mix grated zucchini, flour, baking powder, eggs, milk, and cheese, then let the batter rest.
Cook the pancakes in a pan and serve them hot, layering with salami slices and parmesan shavings.
