Savory strudel with würstel and herbs

Tasty savory strudel filled with würstel, greens, mozzarella, and parmesan, wrapped in golden puff pastry. Great as a main or appetizer.
1 roll of 230g rectangular puff pastry
480g of herbs
150g of sausages
1 clove of garlic
125g of mozzarella
20g of grated parmesan
1 egg
1 tablespoon of sesame seeds
extra virgin olive oil
salt
Blanch the greens in salted water, drain, chop, and sauté briefly with garlic and olive oil to remove excess moisture. Let cool, then combine with sliced würstel, diced mozzarella, parmesan, and a pinch of salt.
Lay the puff pastry on a baking sheet lined with parchment paper. Place the filling in the center, then fold the sides over to seal into a strudel shape. Brush with beaten egg and sprinkle with sesame seeds.
Bake in a preheated oven at 180°C (350°F) for about 25 minutes, or until golden brown. Let it cool slightly, then slice and serve warm.
