Spinach focaccia squares with mortadella

These "Braccio di Ferro" focaccia squares are a quick and flavorful snack inspired by the famous spinach-loving sailor. The ricotta and spinach spread pairs beautifully with mortadella for a soft yet rich sandwich, perfect cut into mini bites for an aperitif or a light lunch.
Ingredients (for 1 person):
1 square of olive oil focaccia (12 cm side)
70 g mortadella Bologna
80 g cow’s milk ricotta
30 g boiled spinach
1 knob of butter
salt
Chop the boiled spinach and sauté it with butter until dry. Let it cool, then mix with sieved ricotta and a pinch of salt to form a creamy filling.
Slice the focaccia in half horizontally and toast under a grill for a few minutes. Spread the ricotta-spinach filling on the bottom half, add mortadella slices, and close with the top. Press lightly and serve. For a fun serving idea, cut into 4 small squares.
