Ingredients

  • 320 gr roasted turkey
  • 8 quail eggs
  • 1 knob of butter
  • Smoked olive oil
  • 2 croissants
  • Salt and pepper

Preparation

If you don’t have a smoker, you can add a few drops of liquid smoke flavouring to 100 ml of olive oil.

Dress the spinach with the smoked oil, salt and pepper.

Cook the quail egg sunny side up with a knob of butter.

Add salt and pepper to taste.

On a plate, arrange the salad, eggs and slices of roasted turkey

Before serving, drizzle with smoked oil.
