Pasta, radicchio, Lamon beans, crispy cooked ham

  • 120 g dry beans soaked
  • 160 g cooked ham
  • 2 lt chicken broth
  • 1 white onion
  • 2 carrots
  • 1 celery stick
  • 2 cloves of garlic
  • 2 bay leaves
  • 1 small branch of rosemary
  • oil
  • salt and pepper
  • 160 g pasta
  • 4 heads of radicchio from Treviso



Soak beans in water for one night. Stir-fry celery, carrots, onion, garlic, rosemary and bay leaves. Add the beans and the chicken broth, then salt and let it cook for 40 minutes.
Aside, in the meantime, cook the pasta "al dente" and stir-fry the slices of radicchio with the strips of cooked ham.  
When the beans are cooked, take half of them and blend them until you obtain a cream.
Add the bean cream, the radicchio and the ham to the remaining beans.
When serving this radicchio pasta, remember to decorate with a slightly baked rose of ham.
